Spaghetti Carbonara Recipe

1 box low carb spaghetti noodles
1 lb thick cut bacon
6 egg yolks
1 pint heavy cream
1 lb good parmesan cheese
1 onion
1 head of garlic

Step 1. Dice up your onion and garlic.
Step 2. Cut your bacon into 1/4" pieces
Step 3. At this point I go ahead and start cooking the bacon in the pan I am goign to cook the dish in. I use a dutch oven.
Step 4. Boil water and cook pasta until al dente
Step 5. Shred the cheese on a grater
Step 6. Separate the egg yolks and place in large bowl.
Step 7. Pour cream in with egg yolks and whisk together.
Step 8. Add cheese to bowl with egg and cream mixture and mix.
Step 9. Drain off bacon on a paper towel. Drain some grease off but leave enough to cook the onion and garlic.
Step 10. Cook the onion and garlic until soft.
Step 11. Add the bacon back with the onion and garlic.
Step 12. Drain the pasta and add to pan with bacon and veggies.
Step 13. Pour cream and cheese mixture into pan with pasta and veggies.
Step 14. Cook mixture over medium heat stirring constantly until sauce thickens and almost boils.
Step 15. Once mixture is thick like alfredo sauce eat immediatly and enjoy.

Here is a paragraph for those needing more info and cannot figure out my steps. I start out by dicing up my onion and garlic with a sharp knife. I put those on a paper plate or in a bowl while I finish cutting up the bacon. I then dice the bacon up into about 1/4" pieces and put on a seperate plate. I use paper so I can just throw it all away when I am done. I then heat up my pan (Dutch Oven)over medium high heat. I add the bacon and cook until crisp. Once bacon is crisp I drain on a paper towel and set aside. I put the pot of water on the stove on high until it boils. Once the water boils I add the noodles and cook until al dente. While the noodles are cooking I shred the cheese on a paper plate. I then seperate the egg yolks and put them into a large bowl. I then add the cream to the large bowl and whisk them together. I then add the cheese to the cream mixture. I cook the onion and garlic until soft in the bacon grease in the dutch oven. I then add the bacon back to the pan off heat and stir. I drain the pasta and add to the dutch oven with the bacon and onion. I then add the cream and cheese mixture to the dutch oven and cook over medium heat stirring constantly until it thickens like alfredo sauce. Once it is thick and creamy eat and enjoy.

Thanks
